Spring Lemon Crinkle Cookies Recipe from De Young Properties!

Spring is the perfect time to experiment with new, refreshing recipes, like these delicious lemon crinkle cookies!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 5 teaspoon freshly grated lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • 5 drops yellow food coloring (optional)
  • 1/4 cup granulated sugar
  • 1/4 cup powdered sugar

Directions

  1. Preheat oven to 325 degrees.
  2. Combine flour, baking powder, baking soda and salt in a bowl. Set aside.
  3. In a separate bowl, cream butter and 1 cup sugar until light and fluffy. Add egg, vanilla extract, lemon zest, lemon juice and optional yellow food coloring. Mix well, slowly adding in dry ingredients.
  4. Roll dough into balls using 1 1/2 tablespoons of dough per ball. Pour 1/4 cup granulated sugar onto a separate shallow plate, spreading evenly. Pour 1/4 cup powdered sugar onto another separate shallow plate, spreading evenly. Roll cookie dough balls in granulated sugar, then in powdered sugar. Then place balls on baking sheets, spaced 2 inches apart.
  5. Bake in preheated oven for 14-16 minutes. Remove from oven. Cool on cooling rack.
