Cranberry Blue Cheese Pine Cones Recipe From De Young

Ingredients:
4 ounces sharp white cheddar cheese, cut into cubes
8 ounces cream cheese
4 ounces blue cheese
2 Tbsp. diced green onion
3 ounces dried cranberries
1 1/4 cup whole almonds, toasted
Rosemary twigs
Baguette slices or crackers for serving
Directions:
Preheat oven to 350 degrees F. Spread almonds in one layer on ungreased shallow baking pan. Bake for 10 to 15 minutes, stirring occasionally, until golden
Place cheddar cheese in a food processor, pulse until coarsely chopped, add remaining ingredients except almonds until well combined. Lay out a large sheet of plastic wrap and place cheese mixture on top, form into the shape of two pine cones
Refrigerate for several hours, reform shapes as needed and place on a serving plate
Let come to room temperature and gently place toasted almonds into cheese balls by starting at the narrow end and placing toasted almonds into the cheese on a slight angle, forming rows
Garnish with rosemary twigs to resemble pine needles. Best at room temperature. Serve with baguette slices or crackers. Enjoy!
