Cranberry Blue Cheese Pine Cones Recipe From De Young

  • 4 ounces sharp white cheddar cheese, cut into cubes
  • 8 ounces cream cheese
  • 4 ounces blue cheese
  • 2 Tbsp. diced green onion
  • 3 ounces dried cranberries
  • 1 1/4 cup whole almonds, toasted
  • Rosemary twigs
  • Baguette slices or crackers for serving


  1. Preheat oven to 350 degrees F. Spread almonds in one layer on ungreased shallow baking pan. Bake for 10 to 15 minutes, stirring occasionally, until golden
  2. Place cheddar cheese in a food processor, pulse until coarsely chopped, add remaining ingredients except almonds until well combined. Lay out a large sheet of plastic wrap and place cheese mixture on top, form into the shape of two pine cones
  3. Refrigerate for several hours, reform shapes as needed and place on a serving plate
  4. Let come to room temperature and gently place toasted almonds into cheese balls by starting at the narrow end and placing toasted almonds into the cheese on a slight angle, forming rows
  5. Garnish with rosemary twigs to resemble pine needles. Best at room temperature. Serve with baguette slices or crackers. Enjoy!
